Avocado Pancakes

Ingredients:
(2 servings)
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 1/2 tablespoons coconut palm sugar
2 teaspoon baking powder
1/4 teaspoon nutmeg
1/2 ripe Hass avocado, mashed
1/2 banana, mashed
3/4 cup nut milk
1 egg
1 tablespoon melted coconut oil
1/2 teaspoon vanilla extractInstructions:
1. Combine dry ingredients in a large bowl.
2. In a food processor, process mashed avocado, banana, milk, egg, coconut oil and vanilla until smooth.
3. Add the avocado mixture to the flour mixture and stir until just combined!
4. Melt some butter or coconut oil in a large skillet and prepare your pancakes. (Small pancakes will be easier to flip, I recommend using 1/4 cup of batter for each pancake)
